Marinated flank steak
Because it's a dry, low-fat meat, flank steak is best prepared by marinating.
What follows is a simple recipe for doing that. Grill it for a delicious
feast!
Makes 4-6 servings, depending on the size of the cut and your appetite.
Ingredients:
- 1-1/2 lbs flank steak
- 3-5 cloves minced garlic
- 1/4 cup brown sugar (or less to taste)
- a couple of tablespoons of sesame oil
- 1/4 cup regular soy sauce
- 1 tablespoon lime juice
- 1 tablespoon freshly ground black pepper (or 1/4-1/2 tsp ground Cayenne)
- Horseradish sauce for/as garnish
Directions:
- Score the meat lightly in a 2" diamond pattern.
- Combine all marinade ingredients in a shallow dish or a heavy Ziploc type
bag.
- Place meat in the marinade. Cover/seal. Marinate at least 6
hours or even overnight. Turn 2-3 times or more.
- Heat & prepare grill. On medium, grill 5 minutes on each side.
This should result in a "medium" steak.
- Let rest for up to 15 minutes before carving.
- Slice thin, diagonally, against the grain.
- Serve with horseradish sauce.
