Marinated flank steak

Because it's a dry, low-fat meat, flank steak is best prepared by marinating.  What follows is a simple recipe for doing that.  Grill it for a delicious feast!

Makes 4-6 servings, depending on the size of the cut and your appetite.

Ingredients:

Directions:

  1. Score the meat lightly in a 2" diamond pattern.
  2. Combine all marinade ingredients in a shallow dish or a heavy Ziploc type bag.
  3. Place meat in the marinade.  Cover/seal.  Marinate at least 6 hours or even overnight.  Turn 2-3 times or more.
  4. Heat & prepare grill.  On medium, grill 5 minutes on each side.  This should result in a "medium" steak.
  5. Let rest for up to 15 minutes before carving.
  6. Slice thin, diagonally, against the grain.
  7. Serve with horseradish sauce.
