Always on the lookout for new recipes, I ran across this Pita recipe. Sadly it was made with yeast. So, I converted it to sourdough just cuz I'm an ornery cuss!
Mix together culture, flour, water, and salt.
Using some flour, knead until smooth (about 5 minutes).
Divide into six balls and knead a bit more until each is smooth and elastic.
Flatten each to 1/4" thick and 4-5 inches in diameter. Cover and let rise until doubled.
Place top-side down on a cookie sheet. Bake at 500 degrees for 10-15 minutes, until light brown.
